Hatch Valley, New Mexico has helped build its reputation with the cultivation of this unique pepper. The natives believe that the rigid extreme climate of this valley combined with the quality of its soil has produced a flavor as unique as its location. After roughly 80 days of growth, the plant from which the Hatch chile sprouts produces between 10 to 20 pods depending on variety and cultural techniques. The Hatch chile varies from a mild, hot, and extra hot flavor, satisfying any palate across the spectrum.
